pumpkin bread





Not only did I ace my spanish oral exam by explaining how to cook this dish, but I also managed to make the perfect loaf of bread. It's so good, no one believed me when I told them that I had made it myself (I promise I did). I'm probably doing some kind of sacrilege by posting my family's  secret recipe online, but good food is meant to be shared. So, without further ado, here is the recipe: 

Pumpkin Bread


Ingredients:
1 ½ cup flour
½  teaspoon salt
⅔ cup sugar
1 teaspoon baking soda
1 cup pumpkin purée*
½ cup olive oil
2 eggs
¼ cup water
½ teaspoon nutmeg
½ teaspoon cinnamon
½ cup chopped walnuts (optional)

Directions:
1. Preheat oven to 325 degrees F
2. Sift together the flour, salt, sugar and baking soda.
3. In a separate bowl mix the pumpkin, oil, eggs, water and spices together.
4. Combine the dry ingredients to the wet, make sure not to mix excessively.
5. Pour into well-buttered 9 x 5 x 3 inch loaf pan.
6. Bake for an hour, or until a toothpick insert into the center of the loaf comes out clean.
7. Turn out of pan and let cool on rack 
8. Enjoy

*How to Make Pumpkin Purée:
1. Cut Pumpkin in half
2. Scoop out the seeds and stringy stuff and lie the pumpkin face down on foil.
3. Bake at 350 degrees F for 45 minutes
4. Let cool and scoop out the flesh. 
5. Freeze until tender, then remove and discard the skin.

    1. Haha, oh my, good catch. It's supposed to be ½ cup chopped walnuts rather than ½ teaspoon. Have you tried the recipe? What do you think?
