oatmeal raisin cookies















It is Mitch's birthday today. He is currently 19 years old and it's bizarre. I've known him for almost 2 years and I can honestly say that is is an amazing thing to be able to watch someone grow. He's not the person he was 2 years ago, nor is he the person he was yesterday because we are always changing. Always experiencing new things and developing from those experiences. 

I care about him very much and it was wonderful to be able to spend a day with him. We ate cold pizza and played video games; and it was nice. 

What I thought you might enjoy are my oatmeal raisin cookies, that are his favorite. (I didn't have any raisins so this batch was just oatmeal cookies) They are not too crumbly and not too chewy so they are just perfect. I halved the recipe and made about 20. So a full batch is around 40. It takes about an hour to make (if you're easily distracted like I am) and is super easy. 

Oatmeal Raisin Cookies


Ingredients:
3/4 cup butter, softened
3/4 cup white sugar
3/4 cup packed light brown sugar
2 eggs
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
2 3/4 cup rolled oats 
1 cup raisins

Directions:
1. Preheat oven to 375 degrees F
2. In large bowl, cream together butter, white sugar, brown sugar until smooth.
3. Beat in the eggs and vanilla until fluffy. 
4. Stir together flour, baking soda, cinnamon, and salt. 
5. Gradually beat into butter mixture. 
6. Stir in oats and raisins. 
7. Drop by teaspoonfuls onto ungreased cookie sheets. 
8. Bake 8-10 minutes in the preheated oven or until golden brown. 
9. Cool slightly remove from cookie sheet and place on wire rack. Let cool completely.
