I baked the most delicious banana (nut) muffins for my birthday (I actually didn't have any nuts to put in them). I used a mini muffin pan so they were super cute AND delicious. Hope you like them as much as I did.
Banana Nut Muffins
⅓ cup brown sugar
4 tbps (½ stick) unsalted butter
1 large egg
2 ripe bananas (the larger the better)
2 tsp milk
½ tsp ground cinnamon
1 cup whole wheat flour
½ tsp baking powder
½ tsp salt
1 tsp vanilla
½ tsp nutmeg
Directions:
1. Preheat oven to 325 degrees F
2. Cream sugar and butter together.
3. In a separate bowl mix the egg, mashed bananas, milk cinnamon and nutmeg.
4. In a third bowl mix flour baking powder, baking soda and salt.
5. Add the banana mixture to the wet mixture and then add in the dry.
6. Do not overmix
7. Put into greased muffin pans
8. Bake in preheated oven for 10-15 minutes, or until a toothpick insert into the center of the loaf comes out clean.
9. Let cool then enjoy.
